In 1760 great-great-grandfather Francesco Calogiuri was a cook to a noble family in Lizzanello in southern Italian region of Puglia.  As cook for this family, Francesco employed a dense cooked grape must to bring out the full flavor of the local cuisine. 

As it passed through generations, this recipe was perfected and named Vincotto.  In production since 1825, it is made with the local Negroamaro and Malvasia grapes and aged for 4 years.  Adding figs to this rich condiment after the 3rd year of aging imparts a sweetness and depth of flavor that makes it versatile for finishing many dishes, from salads to meats and even ice cream!
