Castle Valley Mill’s Hard Wheat variety is currently Redeemer, all grown in Pennsylvania. This has a moderate protein level of about 10.5% to 11.5% and an excellent falling number that gives it outstanding flavor and bread baking qualities.
Uses: Yeast raised or sourdough breads, pasta, pizza (any “stretchy” dough)
Storage: Refrigerate at 42 degrees or cooler for up to six months, frozen bags will keep up to a year.
